Our Standards
Exceptional olive oil is never accidental.
It is the natural result of intentional choices, patient cultivation, and uncompromising standards applied at every stage of production.
Our philosophy extends beyond producing exceptional extra virgin olive oil. We are equally committed to preserving the land that makes it possible.

1. Soil First
Healthy soil is the foundation of extraordinary fruit.
For this reason, we nourish our orchards exclusively with natural, biological fertilizers, including organic manure and seasonal cover crops such as fava beans.
These plants naturally enrich the soil by fixing atmospheric nitrogen, improving fertility, supporting biodiversity, and strengthening the long-term vitality of the orchard.
2. Hand-Harvested Olives
All olives are harvested by hand.
This slower, more selective method protects both the fruit and the trees while allowing us to choose only olives harvested at their ideal moment.
At the end of each harvest day, the olives are transported directly to a frantoio (olive mill) less than one mile away for immediate pressing.
Minimizing the time between harvest and milling reduces oxidation and helps preserve freshness, aroma, and nutritional value.

3. Cold Pressed Within Hours
Our oil is mechanically cold extracted at temperatures below 27°C.
This preserves the oil’s organoleptic integrity—its aroma, flavor profile, and vibrant sensory character—while protecting its naturally occurring antioxidants and polyphenols.
4. Protected Storage
Following extraction, the oil is stored in sealed stainless-steel containers in a temperature-controlled environment until bottling.
Stainless steel protects the oil from light, oxygen exposure, and contamination, preserving its freshness, low acidity, and polyphenol concentration.
We believe that producing an exceptional oil deserves equally rigorous standards in storage and packaging.

5. Respect for the Entire Process
From spring pruning to summer orchard care, irrigation when needed, harvest, extraction, and bottling: every step is approached with precision, respect, and consistency.
This is not industrial production. It is a deliberate, hands-on process rooted in care for the soil, the trees, and the people involved in bringing each harvest to life.
Every Detail Matters
From soil cultivation to final bottling, every detail influences the quality of the finished oil. Premium extra virgin olive oil is not defined by one isolated factor, but by the integrity of the entire chain.
